A twist on the classic French 75...
Starting with a base of their Heather mead, the sugar comes in the form of Blorgeat, the traditional lemon remains and I've added some plum for an extra bit of fruitiness. The pièce de resistance however comes in the champagne swap. @afon_mel have crafted a sparkling session mead which has a wonderful and slightly sweet flavour and thus works well as a sparkling wine substitute.
